Recipe Time - Healthy Breakfast Cookies and Cakes

chrissarcletti

This article features a variety of wholesome and easy-to-make recipes for cookies and cakes that can be enjoyed guilt-free, whether as a breakfast option or a snack. I love sharing these freshly baked treats with my friends and family, who are often pleasantly surprised by the ingredients used.

I often use this website, which is mentioned frequently on www.seeliveeat.com, for a variety of healthy recipes. I seem to keep coming back to Hungry Happens for baking ideas and also frequent Erin Lives Whole. Recipes from both of these sites are featured below.

These 4 recipes have become regulars in my rotation whether we enjoy them for breakfast, as a snack or as a healthy dessert. Click on the links to go directly to the recipes and consider making double batches and freezing the leftovers as they warm up well after a few minutes in the oven.

Healthy Adjustment and Variations

  • For a chocolatey flavor, you might want to try adding cacao powder to enhance the taste of the Banana Breakfast Cookies.

  • For an extra twist, I include finely chopped carrots in the banana breakfast cookies.

  • For the Oatmeal Carrot Cake Bread, I skip the frosting.

  • If the recipe doesn't call for it, a touch of cinnamon can elevate the taste of any of these recipes.

  • If the mixture seems too thick, you can add a splash of water, oat or dairy milk, or even an egg for additional moisture.

  • Typically, I reduce the maple syrup amount by 10 to 20% and adjust the banana quantity, for example, from 3 to 2 or 2.5.
